One of Mexico’s most representative dishes is mole. Its preparation involves processes that have passed on from generation to generation including cultivating and picking peppers and seeds, selecting and combining spices, stemming, toasting, grinding and finally cooking the paste with broth and meat. If we consider the complexity of these processes and the surprising combination of flavors it is easy to understand the leading role moles play in our culinary heritage and in traditional celebrations and parties held throughout the year.
Cocina Mestiza uses recipes from different cultures and exploits the variety of ingredients available in different states to offer our consumer traditional moles such as black mole from Oaxaca, red mole Puebla Style and green mole from Guerrero.
